Greek salad

Salad ingredients

  • Between a third and one half English cucumber, peeled, quartered, seeded, sliced 
  • Green bell pepper, chopped into 1-inch pieces
  • 16-20 cherry tomatoes, halved
  • Half a red onion, sliced
  • ~14 pitted Kalamata olives
  • 4 ounces feta cheese, cubed

Salad dressing

  • Quarter cup extra-virgin Greek olive oil
  • 3 tbsp red wine vinegar
  • 1 garlic clove, finely chopped
  • 0.5 tsp dried oregano
  • 0.25 tsp dijon mustard
  • 0.25 tsp sea salt
  • Black pepper to taste
